Once you've had those cupcakes in the oven for an hour and a half (well over the allowed 20 minutes baking time), you might ask yourselves, "Who put the flour in?" Oi... I didn't have any soy flour to make the appropriate seitan recipe to go in the Seitan Brew Stew from American Vegan Kitchen the other day. So I decided to make the Viva Vegan steamed white seitan to use instead, because it's pretty quick and easy and I like it.<br /><br />What I didn't think about going into this is that the steamed seitan turns out really soft-- most of the VV recipes it goes into call for it to be seared at some point so that it's crispy on the inside and still pretty tender on the outside.<br /><br />I didn't sear it, I just threw it into the stew at the specified time... and it totally disintegrated. I guess the author's idea of a medium sized potato is very different than mine because it ended up being more like a mashed potato pie with veggies...I don't know about you but I enjoy my pot pies to be creamy & rich, this pie was not.
